If you want to sail over to the americas you must wait until you are in your 195 turn and wait till a box pops up saying the world is round when that pops up you can build a new dock build it and you can make carracks they are really goooooooooood!

These are the ones i've tried so far, search for rome total war cheats and you will find most of them work in medieval II total war aswell
